Beef, Bacon and Chive Skillet Dinner (AIP, Paleo, Whole30, Keto)

This bacon and chive beef skillet is a delicious, one-pan meal that comes together with only 5 ingredients in 20 minutes or less. It’s AIP, Paleo and Whole30. 

This is one of those dishes that’s so simple to make I wasn’t sure it even qualifies as a recipe. But I think those are the best kind of recipes sometimes. Simple dishes that use minimal ingredients, require minimal planning, but are absolutely packed with flavor. This bacon, beef and chive one-pan meal is just that. 

Loaded with fresh chives, crispy bacon pieces and a good serving of protein and veggies, this flavorful meal is perfect for busy weeknights! 

Ingredients needed for this beef, bacon and chive skillet. 

Ground beef 

I always keep frozen ground beef on hand for easy dinners.

Bacon

Choose uncured sugar-free bacon for Whole30.

Spinach

Fresh or  frozen spinach both work well in this recipe.

Fresh chives

Fresh chives add a ton of flavor to this dish, so I don’t recommend substituting dried chives. 

Sea salt and pepper

How to make this one-pan meal

Cook the bacon: Heat a large pan over medium high heat and cook the bacon for 4-5  minutes until brown and crispy. Remove from the pan and set aside.

Brown the beef: Add the ground beef to the same pan containing the bacon fat, and season with salt. Crumble the beef using a large spoon, and cook until browned. 

Stir in the spinach: Cook for 1-2 more minutes until the spinach is wilted. 

Combine the bacon and chives: Add bacon back to the pan along with the fresh chives, and stir. 

Serve and enjoy!

What can I serve with this beef and bacon skillet meal? 

If you want to add more veggies to this meal, roasted white sweet potatoes or cauliflower rice both pair well on the side, or mixed right in the pan! 

Can I make this recipe ahead of time? Does it freeze well? 

This dish can easily be made ahead of time and stored in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 6 months.

1 lb grass-fed ground beef

½ lb bacon, sliced into small pieces

½ c fresh chives, chopped

5 oz spinach

½ sea salt

Instructions

  1. Heat a large pan over medium high heat and cook the bacon for 4-5  minutes until brown and crispy. Remove from the pan and set aside.
  2. Add the ground beef to the same pan containing the bacon fat, and season with salt. Crumble the beef using a large spoon, and cook until browned. 
  3. Add the spinach to the pan, and cook for 1-2 more minutes until the spinach is wilted.
  4. Next, stir in the bacon and fresh chives until well combined.
  5. Serve and enjoy!
