Hearty, cozy chicken pot pie soup is deliciously creamy and tastes like everyone’s favorite pot pie in a comforting bowl of soup. Loaded with fresh vegetables, tender chicken, and healing bone broth, this soup is as nourishing as it is delicious. 

What’s one dish that screams comfort food to you? For me, it’s chicken pot pie. While I love the flavor and creaminess of a good pot pie, I’m not a fan of the dairy and starch used in traditional recipes. Not to mention preparing the crust is a bit time consuming, not ideal for busy weeknight dinners. 

Enter crustless chicken pot pie soup. Made with mineral-rich bone broth, herbs, and hearty vegetables, this soup has all the same flavors of the traditional pot pie but with the comfort, and nourishment of soup. 

Instead of the dairy and flour usually used in chicken pot pie to give it creaminess, this soup uses pureed celeriac to create an intensely smooth and rich soup base. Plus it’s a hidden serving of vegetables because hidden veggies are always a win in my book. 

If you’ve never cooked with celery root (also known as celeriac), it’s a root vegetable belonging to the same family as celery, with a mild celery flavor and starchy texture similar to parsnips. 

Celeriac can be a bit gnarly-looking and intimidating to prepare. The easiest way to prepare it is by first cutting the stem end to create a flat surface, then removing any thick pieces of skin with a chef’s knife.

Next, use a vegetable peeler to remove the remaining skin. Don’t let celery root’s gnarly appearance stop you from trying it!

Comforting Chicken Pot Pie Soup (AIP, Paleo, SCD, whole30)

Ingredients

Scale

1 lb chicken breast, cut into 1” cubes

6 c chicken broth

1 medium celery root, cubed (about 2 cups)

3 medium carrots, diced

2 stalk celery, diced

1 medium onion, diced

2 tsp dried thyme

1 tsp dried parsley

1 tsp dried sage

1 tsp sea salt

Instructions

  1. In a large pot, saute the onion, carrots and celery until soft – about 5-7 minutes. Add the chicken and saute until chicken is fully cooked through. 
  2. Transfer the chicken and vegetables to a bowl and set aside. 
  3. Add broth and celery root to the pot and cook for 12-15 minutes. The celery root should be tender when pierced with a fork. 
  4. Using an immersion blender, puree the celery root and broth until smooth and creamy. 
  5. Add the chicken and vegetable mixture, thyme, parsley, sage and salt to the pot. Simmer on medium heat for 8-10 minutes until fragrant. 
  6. Remove from heat and serve immediately. Enjoy!
