Watermelon Mojito Italian Ice (Paleo, AIP)

With the temperatures reaching the mid 90’s almost everyday, I’ve been craving something cool and refreshing in the evenings, and this Italian ice hit the spot!

With no added sugar, not only is this slushy the perfect summer treat, but it’s nutritious too! Watermelon contains several important vitamins many Americans are defiant in, such as vitamin C and A, Potassium, Magnesium, and vitamin B6. And Coconut water, nicknamed nature’s Gatorade because of its electrolyte content, will keep you hydrated after a long day at the beach.

This recipe is super quick and simple so you can get back to soaking up every last minute of the summer sun!

Watermelon Mojito Italian Ice (Paleo, AIP)

Ingredients

Scale

4 Cups cubed watermelon

1 Cup coconut water

4 Tbs lime juice

2 tsp lime zest

1/4 c fresh mint, chopped

Notes

1. Add all of the ingredients to a high speed blender and blend until combined.

 2. Place in the freezer until solid, about 4 hours. Serve and enjoy!
