Sweet Potato Casserole with Marshmallow Topping (AIP, Paleo)

This creamy, delicious, and healthy sweet potato casserole has a gooey marshmallow topping and is the perfect holiday side dish! It’s also completely AIP, Paleo, egg-free and nut-free!

Ingredients

3 lbs roasted sweet potatoes 

3/4 c full-fat coconut milk

3 Tbs maple syrup

2 1/2 tsp cinnamon

1 tsp vanilla extract

dash of ground cloves

4 cups marshmallows

Instructions

  1. In a medium mixing bowl, whip the sweet potatoes and coconut milk using a handheld mixer until smooth and fluffy.
  2. Add the remaining ingredients: ghee or coconut oil, maple syrup, vanilla, cinnamon and cloves.
  3. Blend it all together until smooth and spoon it into a casserole dish. 
  4. Bake at 375° F for 20-25 minutes or until lightly browned around the edges. 
  5. Remove from the oven and sprinkle the marshmallows evenly over the top. 
  6. Turn the oven to the broiler setting and broil the casserole for 1-2 minutes until the marshmallows are browned but not melted. If you’re using homemade marshmallows you’ll want to watch this carefully since homemade marshmallows melt VERY quickly. Remove from the oven and serve!
